RECIPE: Fun Filled Pockets



Today I made some yummy calzone pockets.  I try to clean out the fridge of leftovers to make these.  So for today's pockets we had: Turkey Cutlet, Sunbutter Fruit, and Apple Maple Fruit.  I buy dough from the grocery store that does contain wheat.  For those of you who need a gluten free version, Namaste and Bob's Red Mill both make decent pizza dough.






Sunbutter Fruit Pocket - I mixed sunbutter and honey for the base.  I added chopped apples, strawberries and blueberries for the top.  Then I just folded the dough over and sealed the edges.  I brush the top of the dough with olive oil and poke a couple of holes to allow it to vent. 




This one was my favorite!  I used apple sauce and pure maple syrup as the base and then just piled on fresh fruit.  YUM!!!




I also did a turkey cutlet.  I used leftover cutlet from the previous nights dinner and spread some tomato sauce inside.  This makes a super fast lunch either on the go or at home.  You could totally add onions, peppers, mushrooms...but I know my allergy child, and he prefers it this way. 


Oh and just to show you what a slob I am in the kitchen...take a look at this...hehehe
Some day I'll have that cleaning fairy...some day.
